That’s actually what the bf called me today since I kept showing him every hour something new I just baked! Haha I don’t know what it is, but on my day offs I feel like I have to try all of the recipes I’ve ever laid my eyes on.. But he doesn’t complain at all ūüėČ

So kitchen addiction #1 resulted in Baked Apple-Raisin Oatmeal. Same recipe as always but added some raisins for something different.

My piece with homemade applesauce and a teaspoon of almond butter that the bf & I are completely obsessed with! He says it tastes like Nutella, but for me it tastes like pb but.. better!

Kitchen addiction #2 = Granola. I just eyeballed everything that I put in but here’s a rough recipe:

  1. Mix in a large bowl until combined: 3 tbsp honey, 2 tbsp brown sugar and 2 tbsp water.
  2. Add to the liquid mixture: 3 cups oats, 1/4 cup slivered¬†almonds, 1 cup cereal of¬†choice (I used half Kashi Go Lean Crunch &¬†half Nature’s Path Flax Plus Raisin Bran)
  3. Stir until dry mixture is evenly coated.
  4. Spread evenly on a baking sheet lined with parchment paper.
  5. Bake for 20 min. (or until golden-brown) in a 375 degree oven, moving granola occasionally.

It wasn’t too much on the sweet/sticky side since I didn’t want to use a lot of sugar, but definitely crunchy which¬†equals a¬†good granola¬†to me! No more granola from the bulk bins at the grocery since it’s all loaded with nasty sugars anyways ūüėõ

Kitchen addiction #3 brought about Whole Wheat Bagels (this I must say, am most proud of :D) The recipe I got from Happy Herbivore.. and they were so easy for a yeast newbie for me! I’ve never baked with yeast before so I stared at it confusingly for a couple seconds as it got all brown and foamy¬†and thought..¬†“Is it supposed to look like that?!”

Sprinkled some flaxseed on top before baking. Look at them sitting all cute and looking like they were store bought ūüôā Some other bagels I’m thinking of making next time are

  • Cinnamon Raisin
  • Blueberry
  • Strawberry
  • Banana (with mashed banana & banana chips)
  • Something to do with pumpkin?

Any other ideas.. holler!

Went to the gym to get some cardio & upper body workouts in. When we got home I didn’t really have a formal lunch since we were rushing¬†out the door, so I just ended up nibbling on a whole bunch of stuff which I guess was “lunch”.. pear, small handful of granola, ripped off a tiny piece of the bf’s bagel smeared with almond butter and finally a Clif bar.

    

I didn’t eat this but here’s the bf’s AB&B bagel. He said it was so fresh-out-of-the-oven tasting and a lot better than the store bought bagels we usually get. Yay me! ūüôā

By the time dinner came around I was STARVING because we hit rush hour, therefore sat in traffic for what felt like 10 days!!

But when we got home it was BBQ time! Here’s the Black Bean Burgers (from Veganomicon–hey, this is kitchen addiction #4!) getting all grilled up that¬†I luckily prepared earlier in the day.

(And I can’t lie, I had a chunk of the leftover baked oatmeal while dinner was cooking!)

Dinner was faaaabulous! Grilled veggies are my most favorite way ever of eating them, their flavors always come out so nicely. My plate was another veggie fiesta! Black bean burger, mushrooms, zucchini, carrots, corn on the cob, and a teeeny piece of chicken breast. Went back for another corn cob since I can never get enough of those little guys!  

 

2 more days til the weekend!! And even though it’s only Thursday tomorrow, I’m going clubbing because it’s one of my best friends’ birthday. Not really up for it since I have to get up early Friday morning, so no drinks for me! ūüėõ

Snack attack!

Since I got in late last night from SATC, I knew I was going to sleep in longer this morning but not oversleep as much as I ended up doing! I woke up at 8:30 then went back to bed for a bit intending to wake up at 9.. but the next time I opened my eyes it was already 11:00! That is a really late start for me since I wanted to fit in a workout in the morning before the bf left for work at 12.

BLEH oh well I guess it’s a good thing that I didn’t end up going because my legs are m-i-g-h-t-y sore from the lower body workouts I did yesterday! “It’s good pain, good pain, good pain..” is what I have to repeat in my head while I’m killing myself by walking up stairs!

My bowl of oatmeal def cured me a little a bit though ūüėČ Bananas, raisins, cinnamon and a teaspoon of natural pb. I used to be a creamy pb type of gal, but crunchy has totally won me over! I love that you get that extra bite!

Since I had a day of rest for my poor little legs, kept my lazy Sunday going by cleaning up/doing some laundry. I was going to make some homemade bagels, but decided they were too time consuming (& I wasn’t in the mood to wait around for any¬†bread to rise!) so Wednesday will be the day!

The fridge is naked again (with the exception of the veggie drawer), so for lunch I made a simple Asian Shrimp Stir-fry with some broccoli, carrots, green onions, mushrooms with a soy & ginger sauce topped off with slivered almonds. When in doubt, stir-fry is always the solution!  

& I was reeeeeally craving a fruit parfait, but only had one apple left.. so that little guy was made into a Baked Apple “Pie” Parfait! This had NO added sugar but totally kept my sweet tooth satisfied!

You can’t really see the layers very well (I was too anxious while making this, I wanted to chow it down asap!) but it starts of with a layer of nf plain yogurt, raisins, baked chopped apples (microwaved them for about 1 min with a dash of cinnamon), repeated for a second time, then topped off with more raisins & cinnamon and about 2 tbsp worth of Honey Nut Cheerios as my “pie crust”.

TO. DIE. FOR.

Also got some grocery shopping done and we went a little cereal crazy since most of them were on sale, so why not stock up?! 

  • 2¬†HUGE boxes of Kashi GOLEAN Crunch! (2 for¬†$10!)
  • Fiber¬†First cereal (Generic brand — tastes the same as Fiber One anyways!)¬†
  • HUGE box of Nature’s Path Flax Plus Multigrain
  • Nature’s Path Flax Plus Raisin Bran
  • Almond Butter
  • Box of Chocolate Chip Clif Bars (2 boxes for $20!)
  • Box of Crunchy Peanut Butter Clif Bars
  • Drew’s All-Natural Cesar Salad Dressing
  • Wheatberries (trying these for the first time so I just got a small portion from the bulk section)

Let’s just say I am excited for breakfast now! ūüôā

Then when we got home I was in snacking FRENZY! Started off with a glass of lemonade..

HandfulS of organic unsweetened banana chips (times this portion by.. ???)

Then a mini almond biscotti (which turned into 3 more..)

Oh and for the record I dipped a banana chip in a little almond butter to taste it out. So far, so good!

Wow, what a nice dinner I just had =/.. Oh well, I guess it’s one of those days when my little mouth just wants to non-stop crunch everything in sight!

Tomorrow is the Kanye West “Glow in the Dark” Tour with Rihanna, NERD & Lupe Fiasco in Vancouver, but WAIT and don’t get too excited because poor me is not going :(!¬†I¬†was DYING to go to this one since my friend found floor tickets for $200 but the bf & I decided to save our money for our summer vacations. So I guess it evens out ūüôā But hopefully¬†the bf and I will be doing something fun¬†to compensate for us not¬†going to¬†the concert! ¬†

Sweat.. it’s a good thing.

Ahh.. Martha Stewart has such an influence on me. Started off my awesome Saturday morning by making whole wheat crepes! I used to make them all of the time with my mom’s crepe pan, but a normal nonstick one did the job just as well.

I was feeling adventurous and did 2 different fillings. First, browned thin apple slices in a skillet with a dab of margarine, a couple raisins and sprinkled some cinnamon and brown sugar during the last few minutes of cooking. Layered it inside the crepe along with a little nonfat plain yogurt — one of my staples,¬†I find ways to eat it with¬†everything!

And here’s the second filling.. natural crunchy pb & raisins. When I¬†just finished rolling all of the crepes, I just thought of another really good combo: pb¬†w/ sliced bananas & a drizzle of¬† honey. Yumm.. damnit.

Rollin, rollin, rollin…

Served with some homemade applesauce & nf plain yogurt (as usual) then topped with walnuts!

Had a nice, lazy Saturday morning while the poor bf had to work! Then I decided to put off my list of errands to do for the weekend (I literally make lists for everything..) because it was such a burrrrning hot day so obviously I had to take advantage.

For lunch I had the last of the leftover Mandarin salmon salad (I told you it made a huge bowl!) and a Manila mango.

I thought,¬†“Why not¬†save my $3.50?!” and had an at-home workout for the day. Did the Ab-Ripper workout from the P90X workout series (Def one of the best workout dvds I’ve tried so far, it KICKS your ass big time!!) followed by some push-ups & tricep dips and a good 2.5 hour long jog/walk!

The bf noticed that I came back nice and tanned from my run (I¬†naturally get tanned pretty easily, I’ve never¬†gotten a sunburn, ever!). Thus, his new nickname¬†PB (pale boy) was born. Hahaha I just tease him because he’s clearly¬†jealous of my glowing complexion¬†since he’ll be staying as his¬†pasty-self..¬†stuck¬†at work on gorgeous summer days!¬†¬†¬†

But it was STILL outrageously hot when he got back, so we went down to the Sea Wall. My pre-biking fuel in the car ride there, was some leftover steamed asparagus (ignore the rice morsels since they were both stored in the same container =/) and the bf & I shared this mix of apple slices, walnuts, & raisins.

While biking across the Burrard Street Bridge, found this beauuutiful look-out over English Bay!

Yes, I am determined to live in one of those condos someday!!

Stopped for an outdoor dinner¬†at this japanese restaraunt in my most favorite area ever, Kitsilano on West 4th. The bf’s donburi and California roll:

& I probably finished about 80% of my California, yam & tofu rolls!

Biked/rollerbladed for a good 4 hours! I¬†did a lot of cardio today¬†especially with¬†my jog from earlier on.¬†I really love¬†getting all sweaty and working my body as hard as I can, so let’s just say¬†that¬†I am officially..¬†P-O-O-P-E-D. ¬†

Inside day..

I remember in elementary school during recess and lunch there would be “inside” & “outside” days. You know,¬†like if it was¬†pouring rain then we were forbidden to go outside for breaks and it’d be¬†so rebellious to step outside haha! Oh how I miss those inside days..

The bf and I both had our day off today from work, so I decided to make Cinnamon Raisin Pancakes for breakfast. Pancakes never really fill me up.. but eating them with a spoonful of natural pb on the side helps keep me satisfied for hours.

I posted it in the “Recipes” section¬†because they¬†were really tasty and it’s a bonus that they’re practically fat-free and made with 100% whole wheat flour. It’s funny how after I read the Skinny Bitch book, I’m suddenly deathly afraid of WHITE flour!

I made them into silver-dollar sizes since I wasn’t in the mood for massive, plate-sized pancakes today.¬†Stupid me¬†forgot to take a picture of their undersides where all of the raisin-y goodness is!

Here’s my portion (trust me¬†it may look like a lot, but the¬†pancakes were made really thin & small¬†in diameter!) that I ate along with some homemade applesauce, a spoonful of natural pb, and a¬†dollop of non-fat plain yogurt all topped with an extra sprinkling of cinnamon + more raisins. Could you tell I was a little indecisive about what I wanted to eat them with? Haha so that leads to eating them with a little bit of everything!

The bf totally¬†SLATHERED the natural pb on his. Sorry you have to see his nasty looking thumb in this picture though.. Yep, he’s missing half of his nail now¬†from a work accident:¬†a box full¬†of heavy¬†tiles fell and literally stabbed his nail off! Yowza. But it’s okay now I guess,¬†since he shows it to everyone like he’s some sort of proud freak show.. =/

Found some fresh pineapples in the fridge that the bf’s mom must’ve just cut this morning. I¬†was¬†so excited¬†(a little¬†too excited¬†just over¬†a container of pineapples..) when I saw them!!

Caught Cissi being the usual princess she is¬†— all stretched out for a belly¬†rub then crying if she doesn’t get what she wants. True diva

I¬†was camera-less for the rest of the day since the bf’s sister needed it to borrow it for school.¬†Boooo!

And the weather was not looking so nice today¬†which meant¬†we couldn’t go rollerblading along the Sea Wall as planned ūüė¶ So to the gym it was! Before heading to the¬†gym, I had¬†two more C&R pancakes with a dab of pb as a pre-workout snack and had¬†more of the¬†pineapple when we got back.

My snacks before dinner were a handful of raisins (re-used picture =O!), a yogurt-covered pretzel sample at the grocery store, and a few walnuts to help tide me over.   

& here is a sad looking webcam picture of a really good dinner, Fish & Chips healthy style!

The Fish..

Salmon fillets coated in a batter made of:

  • 1 cup whole-wheat flour
  • 1 tsp baking powder
  • 1/2 cup skim milk
  • 1 egg
  • 1 tbsp lemon-pepper seasoning

Then baked in a 425 degree oven for about 20-25 minutes, flipping them over halfway through.

The “Chips”..

A very large yam cut into strips then tossed with a little olive oil and sprinkled evenly with a little:

  • Black pepper
  • Garlic salt
  • Paprika

And baked as well in a 425 degree oven for 20-25 minutes.

I ate my fish & chips along with some steamed broccoli w/ a squirt of lemon juice and a dash of pepper. I also wanted something along the lines of tartar sauce to eat with my fish without the fattyness of mayo so I made my own “Tartar Sauce” by mixing some nonfat plain yogurt, a tablespoon of sweet green relish, and a little pepper & paprika. It was the exact taste I was going for!





Something different for breakfast?!

This just goes to show I always must have my oats for breakfast! But this time.. Baked Apple¬†Oatmeal. Got the recipe from Kath’s blog¬†for Banana Baked Oatmeal but changed it up a little according to the ingredients we had since¬†we are in dire need to grocery shop…¬†

Layered apple slices on the bottom of the baking pan as well as to the top of the oatmeal instead of bananas. I also added some cinnamon to the batter (I add extra cinnamon to everything) and drizzled honey instead of brown sugar for the last few minutes of broiling.

My portion that I ate along with a spoonful of crunchy natural pb & some homemade applesauce (basically just pureed apple chunks with a little bit of water). MmMm I love my oatmeal in any form!

Needed to finish off the rest of the nf plain yogurt container so made a Strawnana smoothie. Cinnamon definitely makes the taste of this!

Ran a few errands before heading home for lunch then off to work! The bf bought his rollerblades today so hopefully if the weather is nice, we’re going around the Sea Wall again tomorrow. I can’t believe I’ve lived in Vancouver for how long and never thought to do the Sea Wall?! It really is definite must-do for anyone that comes to this city. It’s an awesome workout as well.

Back home I stared at the empty fridge for a bit to think of what I was going make with the leftovers and came up with a quick Asian broccoli stirfry. Sauteed broccoli, a few spare ribs, and chopped green onion with mushroom soy sauce and water. Then topped it all off with a couple of chopped almonds! It turned out pretty good but would’ve been better in my opinion if we had some fresh ginger.. ūüė¶

If I was hungrier, I would’ve ate this with brown/wild rice or some vermicelli rice noodles but my baked oatmeal breakfast really held me over for a while!

Needed dessert so I had a bit of the leftover baked oatmeal topped off with some nf plain yogurt, raisins, cinnamon, and a drizzle of honey. I had to take the picture on the windowsill since it got better lighting (HI random woman in the back!) 

I also just realized that my gross looking nails always seem to show up in the pictures! So I did them the other¬†day,¬†not the BEST paint job in the world but at least it bears everyone from having to look at my half-chipped-off-lazy nails!¬†It’s a¬†really cute shade of pink called “Blushed” by Revlon. I¬†found it on sale for $5 when we originally were stopping for milk at one in the morning….

Another random buy are these sunglasses that I got for $7! They’re really similar to the vintage ones I had my eye on, but for a poor college student that’s going to end up breaking/losing them anyways.. this was a deal to me!

Came home from work to seriously MOUNTAINS of little boxes filled with leftover Chinese food since the bf’s parents went to go eat out for lunch. I’m not really crazy about Chinese food since it always tends to be on the greasy side, so I just had a small portion of what seemed to be some of the more healthy choices. Stir fry chicken&broccoli with veggie fried rice.

Aaaand not to brag or anything.. but I think my stir-fry was much tastier (& less greasy!) than this ūüėČ

The bf’s cousins from out of town are heading back tomorrow morning, so we decided that we were going to go to the beach by the University of BC (which also happens to be a nudist!! beach) to have a bonfire. Well, that plan failed since the beach was closed “after hours”. Instead we went to this really cute 24 hour coffee house in Kitsilano which totally had a hippie/vintage feel. I loved it! They had paninis, homemade rustic sandwiches/desserts ugh everything looked so good!¬†But¬†the bf and I just ended up sharing¬†a small bowl of Maple Walnut Gelato which was reallyyyyy good. But me, I’m a sucker for gelato anytime ūüėČ
