I am SUCH a ball of congestion right now. My allergies are going crazy so I’m constantly sneezing every two seconds. And when I’m not sneezing, I’m trying to make myself sneeze which results in weird looks from people =/

So I really wanted something cold for breakfast and couldn’t stand the thought of hot oatmeal on a day like today. But Kashi alone doesn’t fill me up, so I decided to make my oatmeal cold by sticking it in the fridge while I packed the bf’s and mine’s lunches.

Loved the creamy-ness of the oatmeal combined with the crunch of Kashi!

I really wanted to go for a run in the morning while it was still kind of breezy, but wanted a change of scenery. Don’t you just hate seeing the same thing all of the time while going for runs? That’s why I loathe treadmills with a passion! It gets so repetitive/boring after five minutes for me. Anyways, I decided to drive down and park my car at the beach so I could run along the shore. Well, turns out the only free parking I could get was a loooong way from the beach but I did not want to PAY to run. It is an extremely steep road heading DOWN the beach.. So I can say I got an awesome lower body workout on the way back up! 😉

Came home for leftover bbq for lunch! Grilled chicken breast, honey-glazed carrots, yellow pepper, and zucchini. Still as good as it was yesterday 🙂

It’s the bf’s and I’s 22 month anniversary today. (Yeah, we still do the anniversary thing monthly) I think it’s cute :)! So we went to go celebrate by eating at the same Japanese place we did the other day because it really was that good!

Miso soup and ebi sunomono to start. The ebi was actually in vinegar this time so it was all good 🙂  

Then I obviously had to get the Vegetable Combo Boat again! Green salad with miso mayo dressing, Veggie Tempura (onion, yam, sweet potato), Tofu Teriyaki on top of stirfry veggies, edamame, and a veggie roll. This is seriously my dream combo.. it has all of my favorites on here!

Afterwards, we stopped by the grocery store to pick up some yogurt for smoothies and new cereal (yay!). Then I was a sucker for the bf’s persuasion to get another bucket of Chapman’s Maple-Walnut Frozen Yogurt. Ahh this stuff is beyond addicting!!

So here’s my tiny ice cream dish with about half a cup of the “fro yo” and a couple more walnut pieces I stuck on top for an extra crunch!  


Goodnight everyone! I’m off to study some more until I fall asleep on top of my book as I sign that I’m done for the night..


And the countdown begins..

T minus 7 days until Houston! Ahh I’m so ready for that burning-feel-like-you’re-gonna-melt weather! PLUS there’s an outdoor pool just for the residents of my mom’s complex, so guess where I’m going to be 🙂

Sorry for another delayed post, I’ve been so busy with trying to study for the THEA exam and all of these errands that I’m trying to get done before I leave.

Yesterday’s breakfast was boresville. We hardly had any Fiber One left, no strawberries, no bananas.. NADA! So here’s my  plain jane bowl of the last of Fiber One from the bottom of the box and Kashi Go Lean Crunch with a couple raisins. Kashi just isn’t the same all by its lonesome self! 😦

I needed to make a quickie lunch since I still had a ton of stuff to do, so I finally finished the cooked quinoa! Seems like I made that whole batch months ago! So threw in quinoa, sliced mushrooms, and some tomato sauce in a bowl, tossed it around and microwaved for a couple of minutes. Not bad for a 5 minute lunch.. But while I was munching it down, I was wishing I’d cooked it on the stove with some onions & mozzarella cheese. Yeah, so I had to imagine that’s what I was eating instead 😛

On the side was the very last mango from our massive case. Such a sad occasion 😦 I’ve been craving chocolate all day so I also had some chocolate graham bears too.

We’re always trying to get the most use out of our new BBQ, so Father’s Day dinner was all grilled up! The bf’s dad had to miss his own dinner since he was at work though!

My plate with a chicken breast, honey-glazed carrots, mushrooms, zucchini, potatoes and a yellow pepper. I think I’m close to finally perfecting grilled veggies, a major step up from the blackened ones that I started with =/

I also had a bowl of Mung Bean Soup on the side. I forgot what the Filipino name for it is, but it’s basically a broth based soup with mung beans, spinach, and onions. Such comfort food! 🙂

How cute is that?! The bf set up the chocolate graham bears all nicely on top of a scoop of Breyers FF Chocolate Brownie Ice Cream.

I hate eating things that look so cute! It makes me feel bad as I bite their little heads off.. but they taste oh so good 🙂

Just came back from a run on the beach, the greatest thing ever. So I’m going to try to fit in more studying (booo!) and packing before I head off to work.

Ta ta! 🙂

Where the heck is summer?!

The weather is seriously RIDICULOUS right now in Vancouver.. It was pouring rain all day long with strong winds and we even got some thunder this afternoon! But then again, it’s always unpredictable here.. just a couple of weeks ago we were up to 24*C! Oh well, in just two short weeks I’m off to burning hot Houston, TX 😀

Nothing creative here for breakfast. Just the usual Fiber First, Kashi Go Lean Crunch, but I poured in some Nature’s Path Multigrain Flax Plus since we ran out of the raisin bran. There’s some change for ya!


This crunch is the reason why I get out of bed!

Today I became quinoa de-virginatized!! We had a whole container full of it stored away in the cupboard that I totally forgot about, so here it is as Chickpea Quinoa Pilaf from Veganomicon. It was a little mushy and I was just thinking.. “Maybe quinoa is supposed to be mushy!” but then I realized I was supposed to add uncooked quinoa to the recipe. WHOOPS! But you know me, I’ll still eat anything! 😛

Then I wanted to make something dessert-y, so voila! This may not look too exciting..

But when flipped over, all the yuminess is revealed. Upside-Down Apple Pie! I didn’t use any margarine/shortening, so the crust wasn’t flakey like a real pie crust.. but still really good.

Posted this up in the Recipes section, so try it out! Make it when you need to look like you slaved all day making a pie from scratch.. but really, you cheated 😉

Had my dessert before my lunch 🙂

Had a small bowl of Chickpea Quinoa Pilaf. Then I wanted another slice of the apple pie, but had two Banana-Apple & Raisin Oatmeal Cookies instead 🙂

Dinner featured some leftovers but was still Oh. So. Good.

Small piece of roasted chicken breast, grilled mushrooms, peppers, zucchini, sweet potatoes, Chickpea Quinoa Pilaf and some steamed bok choy. I love having a variety of veggies on my plate.. YUM!

We went for a quick grocery stop to pick up some more ww flour (bagels tomorrow!!) and I won’t lie.. I “sampled” two yogurt covered almonds from the bulk bin section. SHH! I might be charged with theft under $1000 😉 (Yeah right, that’s what they told us when I use to work as a cashier at a grocery store –probably to keep us away from constantly munching out of the bins!)

My sweet tooth carried on until we got home, so I made an Iced Coffee (I’m not really a big coffee drinker but I was having a huge craving for a Tim Horton’s Iced Capp!) and one more Banana-Apple & Raisin Oatmeal Cookie.

No, not in that way! 😉

Luckily my stuffiness went away as the day went by.. thank God! I was hoping it wouldn’t get worse that I’d have to take days off work because with all of these vacations coming up.. I’ll be needing the $$$!

Cereal mix once again.. Nature’s Path Raisin Bran, Fiber First, and Kashi GoLean Crunch topped off with more raisins. Filled the bowl with mostly Kashi today because I was in a really sweet/crunchy/carb-y mood this morning!

Found the last Tazo Green tea bag hiding away in the cupboard. I LOVE this flavor. I forgot what it’s called but it has a minty twist to it, so refreshing!

For lunch I still had the urge for something sweet/crunchy/carb-y so I made half of a Grilled PB&B Sandwich. Mashed up half a banana, spread some natural crunchy pb on a slice of multigrain bread, and grilled it on a nonstick pan, pressing the sandwich with the back of a spatula. The pb slightly melted and the mashed, warm banana just made it nice and gooey. Totally hit the spot!

Had a side of steamed Bok Choy & Broccoli but turned out I wasn’t feeling up for the veggies, so just took a couple of bites of it and enjoyed my two Banana-Apple & Raisin Cookies instead 😀

Four Banana-Apple & Raisin Oatmeal Cookies fueled my sweaty workout. Did a lot of lower body exercises, which burned like hell.. but that burn just feels oh so good 🙂 Workout ideas came from Women’s Health (I always find a ton of awesome ones from here) as well as Kelly’s blog.

The weather cleared up for the rest of the day (it’s been grey all week long!) so we took advantage and grilled up our dinner. Tossed some red peppers, mushrooms, zucchini, asparagus, and sweet potatoes (microwaved them to speed up the grilling process) in a little olive oil, black pepper, and seasoning salt. Poked them through skewers (makes it easier to flip) and voila!

I always like to keep my plates proportioned into 1/2 veggies, 1/4 carbs & 1/4 meat, nice and balanced! The star of the meal was obviously the grilled veggies (but the bf begs to differ) along with a small piece of the beef tenderloin and wild brown rice (this rice has random dense crunches to it–love those parts!)

I am feeling extra drowsy right now.. I let the bf know and he tells me, “Oh yeah I think I gave you the Tylenol nighttime pill..”  AWESOME, no wonder why I feel so knocked out! Guess I’m off to a good night’s sleep!

Yep, one of those days when I feel like snacking on everything.. just out of pure boredom! Good thing I always keep myself busy, otherwise I would have packed on some major pounds by now!

Morning was a good start with my cereal smorgasbord! Fiber First, Nature’s Path Raisin Bran, Kashi GoLean Crunch with bananas and raisins. I wasn’t feeling up for the bananas today though (SHOCKER!!) so I just pushed the little guys to the side. But I seriously could live on this breakfast. I am not even joking.. I crave for it at every meal but I know my body can’t live on just carbs and bananas forever!

Found a bag of baby carrots and snacked on a few (out of boredom!!)

Lunch was leftovers from last night’s BBQ but still just as good when I warmed everything up in the toaster oven to keep the crunchy/grilled taste. Small piece of chicken breast, black bean patty with dijon mustard shmeared on top, grilled zucchini, tomatoes & carrots.

Had a “steamed salad” to add to the veggie count! Steamed broccoli, baby carrots, and 2 mini corn on the cobs with soy-ginger dressing to dip.

Then starting from here my boredom eating was getting all wonky.. baked apple oatmeal crisp (finished maybe half of this?)

Later on with snack #2.. a handful of Multigrain Cheerios

Then I found THIS terrible thing in the freezer!!!! Chapman’s Maple Walnut Frozen Yogurt.

Oh. My. Lord. Let’s just say I had a couple bites too many (but oh man it was sooo worth it!) Frozen yogurt + any type of nut + uncontrollable hand + spoon + me = will power out the window.

For dinner, the bf’s mom made Shrimp Sinigang which is a Filipino dish and umm.. I have no idea how to explain it so I Wikipedia-ed it for all of you 🙂

“Sinigang is a Philippine dish famous for the variety of ingredients one can use as well as for its taste. Sinigang is typically sour and is most often likened to Thailand‘s tom yam.

Sinigang often incorporates stewed fish, pork, chicken, shrimp, or beef. Sinigang’s characteristic taste is attributed to the ingredient that gives its sour taste, not to the meat’s flavor.

Pork sinigang, the most common variety, is usually prepared with tamarind (which provides the sourness), tomato, leek, taro and onion. Other vegetables cooked in sinigang may include okra, spinach, radish, green pepper and string beans.”

So since I went all snack-crazy earlier today, kept my portions at dinner pretty small using our handy teeny-tiny bowls! Served my Shrimp Sinigang (those greens are just spinach in case you’re thinking it’s some special exotic vegetable) over some multigrain wild rice and had a small leftover piece of grilled chicken breast.

Lucky me has a late start at work tomorrow so I’m heading to the gym and possibly yoga? I always want to drop in a class but never find the time! YAY to Fridays! 😀 BOO to a whole weekend of rain 😦

That’s actually what the bf called me today since I kept showing him every hour something new I just baked! Haha I don’t know what it is, but on my day offs I feel like I have to try all of the recipes I’ve ever laid my eyes on.. But he doesn’t complain at all 😉

So kitchen addiction #1 resulted in Baked Apple-Raisin Oatmeal. Same recipe as always but added some raisins for something different.

My piece with homemade applesauce and a teaspoon of almond butter that the bf & I are completely obsessed with! He says it tastes like Nutella, but for me it tastes like pb but.. better!

Kitchen addiction #2 = Granola. I just eyeballed everything that I put in but here’s a rough recipe:

  1. Mix in a large bowl until combined: 3 tbsp honey, 2 tbsp brown sugar and 2 tbsp water.
  2. Add to the liquid mixture: 3 cups oats, 1/4 cup slivered almonds, 1 cup cereal of choice (I used half Kashi Go Lean Crunch & half Nature’s Path Flax Plus Raisin Bran)
  3. Stir until dry mixture is evenly coated.
  4. Spread evenly on a baking sheet lined with parchment paper.
  5. Bake for 20 min. (or until golden-brown) in a 375 degree oven, moving granola occasionally.

It wasn’t too much on the sweet/sticky side since I didn’t want to use a lot of sugar, but definitely crunchy which equals a good granola to me! No more granola from the bulk bins at the grocery since it’s all loaded with nasty sugars anyways 😛

Kitchen addiction #3 brought about Whole Wheat Bagels (this I must say, am most proud of :D) The recipe I got from Happy Herbivore.. and they were so easy for a yeast newbie for me! I’ve never baked with yeast before so I stared at it confusingly for a couple seconds as it got all brown and foamy and thought.. “Is it supposed to look like that?!”

Sprinkled some flaxseed on top before baking. Look at them sitting all cute and looking like they were store bought 🙂 Some other bagels I’m thinking of making next time are

  • Cinnamon Raisin
  • Blueberry
  • Strawberry
  • Banana (with mashed banana & banana chips)
  • Something to do with pumpkin?

Any other ideas.. holler!

Went to the gym to get some cardio & upper body workouts in. When we got home I didn’t really have a formal lunch since we were rushing out the door, so I just ended up nibbling on a whole bunch of stuff which I guess was “lunch”.. pear, small handful of granola, ripped off a tiny piece of the bf’s bagel smeared with almond butter and finally a Clif bar.


I didn’t eat this but here’s the bf’s AB&B bagel. He said it was so fresh-out-of-the-oven tasting and a lot better than the store bought bagels we usually get. Yay me! 🙂

By the time dinner came around I was STARVING because we hit rush hour, therefore sat in traffic for what felt like 10 days!!

But when we got home it was BBQ time! Here’s the Black Bean Burgers (from Veganomicon–hey, this is kitchen addiction #4!) getting all grilled up that I luckily prepared earlier in the day.

(And I can’t lie, I had a chunk of the leftover baked oatmeal while dinner was cooking!)

Dinner was faaaabulous! Grilled veggies are my most favorite way ever of eating them, their flavors always come out so nicely. My plate was another veggie fiesta! Black bean burger, mushrooms, zucchini, carrots, corn on the cob, and a teeeny piece of chicken breast. Went back for another corn cob since I can never get enough of those little guys!  


2 more days til the weekend!! And even though it’s only Thursday tomorrow, I’m going clubbing because it’s one of my best friends’ birthday. Not really up for it since I have to get up early Friday morning, so no drinks for me! 😛

1) I’ve moved NUMEROUS times since this past June. Started off in my mom’s house (she moved to Texas and I didn’t want to go) > best friend’s house (I felt bad since I was sorta invading her small space) > rented out a basement suite for about 3 months (it was underground so I got hardly any sunlight, it felt like a prison!) > dad’s house (I was at my bf’s place 99% of the time) > bf’s house ( I moved here!) Yep, that’s a total of 4 times and it hasn’t even been a full year yet!

2) I’ve always been really independent for my age. My parents were always busy/at work, so I started cooking when I was 7 (learning by watching The Food Network!) — not like Kraft dinner boxes, but full on meals such as spaghetti from scratch. I packed my own lunches since the 2nd grade, did my own laundry at about 10.. So now I feel like I’m in my mid-40s haha! TONS of my friends even right now still have their parents doing everything for them (packing lunches, doing/folding their laundry, giving them “going out” money..)

3) Still to this day, I CANNOT sleep in the dark! If my bf or someone else is in the room with me, it’s fine. But if I’m sleeping by myself I always turn on a dim light or some music. I have a big imagination from all those horror movies that catches up to me while I’m laying down in bed 😛

4) I’m the only one out of all my friends that LOVES eating sushi with wasabi and ginger. It just tastes so naked without it! And I put a TON of ginger on my sushi, meaning almost mountain-ous. I also love that kick wasabi gives to each bite. My bf is so disgusted by it, he won’t even eat a piece of sushi that has even slightly grazed a piece of ginger! Ahh.. I could eat sushi every single day.  

5) When I was a kid, my mom told me that she could levitate off the ground as a joke. But clearly I didn’t get the memo that she was kidding around because here I thought my mom was this amazing woman with floating powers. Then at my 10th birthday party I gathered up all my friends and told my mom to levitate for everyone. Yes, everyone left disappointed.

*BONUS! The bf and I have 2 vacations lined up for this summer. First, Houston, TX to visit my mom later this month. Then in July.. to San Diego and stopping by maybe Rosarito Beach, Mexico just for the day? So if anyone has been to any of those places, let me know how it was or what to do! Oh and since our 2 year anniversary lands on a weekend (August 16th!) we might go away someplace not too far away to celebrate! WOOHOO I ❤ summer 🙂

Now, fooooooooood!

Since I’m still recovering from the breakfast blunder that occured the other day.. had a yummy bowl of Fiber One Cereal with bananas, raisins, and walnuts. I LOVE this cereal! I think it also said there’s 13g of fiber per half cup? But YUM, this is now my new.. pressed-for-time-but-still-want-something-tasty-to-eat-for-breakfast, breakfast! 

Went to the gym after running a few quick errands for a GREAT workout. I love that boosted-energy feeling after a productive workout!

Lunch was a leftover skinless BBQ Chicken Breast from last night with a Spring salad with soy-ginger dressing on the side.

I love eating my meals with chopsticks even if they’re not Asian-y!

Snack #2 was a Baked Apple Oatmeal Crisp. I was craving something dessert-y and this def cured that craving! Chopped up some apples, threw it in a small oven-safe dish, mixed up a 1/4 cup of oatmeal with a little water and a dash of whole wheat flour and Splenda, smothered the “crisp” part on top and broiled in in the toaster oven for about 10 minutes. The topping came out nicely crisp. DEEElicious!  

For dinner the bf’s mom got Chinese take-out. Sweet & sour pork, chow mein, the typical.. But I wasn’t feeling a greasy meal, instead.. I was craving BREAKFAST! I was in a total cereal mood so I had another bowl of Fiber One with bananas and raisins then a small side of non-fat cottage cheese topped with more raisins and cinnamon.

Tomorrow is what we have all (well, me mostly) been waiting for.. FRIDAY!! 😀
