Whole Wheat Cinnamon Crepes

Makes 10 crepes

Crepes:

  • 1 cup skim milk
  • 3/4 cups whole wheat flour
  • 2 egg whites
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp sugar (optional)

Cinnamon Apple-Raisin Filling:

  • 2 apples, cored & thinly sliced
  • 1/4 cup raisins
  • 1 tsp margarine
  • 1 tsp cinnamon
  • 1 tsp brown sugar
  • 1/3 cup non-fat plain yogurt

Filling:

Melt margarine on a skillet over medium heat.

Core and slice apples thinly. Add apples and raisins to the pan until apples brown and caramelize.

After about 8 minutes, sprinkle brown sugar on top of apple and raisins.

Remove apples from heat when brown sugar is melted.

In a blender, process milk, vanilla extract, and egg whites until foamy.

Crepes:

Add flour, cinnamon and sugar. Blend until mixed. Batter should thin and a little runny.

Heat a crepe pan or non-stick skillet over medium heat. Pour about 4 tablespoons and swirl the whole pan so the batter covers the entire bottom.

Flip when the crepe looks dry and edges slightly form tiny bubbles (about 1 minute per side).

Keep finished crepes in a 150 degree oven to warm.

To prepare crepe, spoon 1 tablespoon plain yogurt onto one end of crepe and layer apple slices with raisins on top.

  • Natural peanut butter + sliced bananas + honey
  • Applesauce + walnuts
  • Plain yogurt + sliced bananas + honey
  • Sliced poached pears + plain yogurt + honey
  • Chocolate syrup + sliced bananas + plain yogurt
  • Natural peanut butter + raisins + sliced bananas

Roll up!

And serve!
