Upside-Down Apple Pie

Apple Filling:

  • 3 small apples, cored & thinly sliced
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tsp margarine


  • 1.5 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 1 cup skim milk
  • 1/2 tsp vanilla extract
  • 1 tsp lemon juice

* Note: Since no fats are incorporated, the crust will be more dense and cake-like, not flakey *

  1. Preheat oven to 350.
  2. Heat a medium sized non-stick skillet over med-high heat and add margarine. When melted, toss in apple slices, brown sugar and cinnamon. Cook until apples caramelize (the sugars should melt and apples turn a golden-brown color) for about 10 minutes.
  3. Combine all “crust” ingredients and mix until moistened.
  4. Once apples are finished cooking, remove from heat and pour batter on top of apples.
  5. Place skillet in the oven and bake for about 30 minutes or until a toothpick comes out clean from the center.
  6. Once finished baking, flip pie upside down on a serving platter.
