Mandarin Salmon Salad

Makes 3-4 servings


  • 1/3 cup olive oil
  • 4 tsp sesame oil
  • 3 tbsp soy sauce (I used a mushroom version)
  • 2 tbsp minced fresh ginger
  • 3 thick skinless/boneless salmon fillets
  • Black pepper


  • Approx. 400g combination of: Chinese cabbage, red cabbage, iceburg lettuce
  • 1/2 head broccoli
  • 1 red & 1 orange pepper
  • 1 mandarin orange, sliced into segments
  • 1 carrot stalk, sliced
  • 3 green onions, sliced
  • 1/4 cup cashews or peanuts, chopped (optional)
  1. Whisk all dressing ingredients together. Reserve 1/4 cup of mixture. Marinate salmon fillets for 10 minutes.
  2. Remove fillets from marinade and season with black pepper.
  3. Place fillets on a skillet on medium heat. Close lid and cook 1 minute per side for medium rare.
  4. Toss all salad ingredients together with the reserved dressing. Place finished salmon on top and sprinkle with chopped nuts.
