Cinnamon Raisin Pancakes

  • 1 1/2 cup skim milk
  • 1 tbsp honey
  • 2 tbsp non-fat plain yogurt
  • 1 1/3 whole-wheat flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • 1/4 cup raisins


  1. In a medium bowl, mix together all ingredients except raisins.
  2. Reserve about 1/4 cup of the batter and set aside in a small bowl. Combine raisins with the reserved batter and stir until all raisins are coated.
  3. Heat a non-stick skillet over medium and pour batter onto pan. I make my pancakes into a silver-dollar size.
  4. Immediately after pouring batter onto pan, spoon raisins on top of the cooking pancake. Flip when edges turn golden brown and bubbly.
  5. Keep finished pancakes in a warm oven to keep them from cooling.
  6. Some topping suggestions: maple syrup, dollops of non-fat plain yogurt drizzled with honey and a sprinkling of cinnamon, natural peanut butter, applesauce.. or anything your heart desires 😉
