Chicken & Tomato Quinoa

Makes 2 servings

  • 2 cups cooked quinoa
  • 1 cup tomato sauce
  • 1 tsp olive oil
  • 1 tomato, diced (can omit if using chunky tomato sauce)
  • 6 medium mushrooms, sliced
  • 1 small red pepper, diced
  • 1 garlic clove, minced
  • 1 small onion, chopped
  • 100g cooked chicken breast, shredded to small pieces (can be substituted for tofu)
  • 1 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • Dash of salt & pepper
  • Slivered almonds to garnish
  1. Heat olive oil on skillet over medium heat.
  2. Saute onion and garlic until onion is translucent.
  3. Add mushrooms and red pepper. Cook until red pepper is tender.
  4. Add quinoa, tomato sauce, tomatoes, chicken breast and spices to vegetables. Saute for 2 minutes.
  5. Sprinkle with almonds and serve!
