Where the heck is summer?!

The weather is seriously RIDICULOUS right now in Vancouver.. It was pouring rain all day long with strong winds and we even got some thunder this afternoon! But then again, it’s always unpredictable here.. just a couple of weeks ago we were up to 24*C! Oh well, in just two short weeks I’m off to burning hot Houston, TX 😀

Nothing creative here for breakfast. Just the usual Fiber First, Kashi Go Lean Crunch, but I poured in some Nature’s Path Multigrain Flax Plus since we ran out of the raisin bran. There’s some change for ya!

This crunch is the reason why I get out of bed!

Today I became quinoa de-virginatized!! We had a whole container full of it stored away in the cupboard that I totally forgot about, so here it is as Chickpea Quinoa Pilaf from Veganomicon. It was a little mushy and I was just thinking.. “Maybe quinoa is supposed to be mushy!” but then I realized I was supposed to add uncooked quinoa to the recipe. WHOOPS! But you know me, I’ll still eat anything! 😛

Then I wanted to make something dessert-y, so voila! This may not look too exciting..

But when flipped over, all the yuminess is revealed. Upside-Down Apple Pie! I didn’t use any margarine/shortening, so the crust wasn’t flakey like a real pie crust.. but still really good.

Posted this up in the Recipes section, so try it out! Make it when you need to look like you slaved all day making a pie from scratch.. but really, you cheated 😉

Had my dessert before my lunch 🙂

Had a small bowl of Chickpea Quinoa Pilaf. Then I wanted another slice of the apple pie, but had two Banana-Apple & Raisin Oatmeal Cookies instead 🙂

Dinner featured some leftovers but was still Oh. So. Good.

Small piece of roasted chicken breast, grilled mushrooms, peppers, zucchini, sweet potatoes, Chickpea Quinoa Pilaf and some steamed bok choy. I love having a variety of veggies on my plate.. YUM!

We went for a quick grocery stop to pick up some more ww flour (bagels tomorrow!!) and I won’t lie.. I “sampled” two yogurt covered almonds from the bulk bin section. SHH! I might be charged with theft under $1000 😉 (Yeah right, that’s what they told us when I use to work as a cashier at a grocery store –probably to keep us away from constantly munching out of the bins!)

My sweet tooth carried on until we got home, so I made an Iced Coffee (I’m not really a big coffee drinker but I was having a huge craving for a Tim Horton’s Iced Capp!) and one more Banana-Apple & Raisin Oatmeal Cookie.

Great recipes for the cookies and cake, just curious do you ever try to figure out the nutritional profile of the foods you make? I am def going to try to make that cake. Thanks!

Um…YUM. That’s all I can say about all of your pictures! That apple pie looks absolutely incredible – I must try it sometime!!

Summer is in full-swing here – it’s getting into the 100°F temperature range!! Ahh!!

The Chickpea-Quinoa Pilaf and the Upside-Down Apple Pie look PERFECT to me!! Yum!!

Wow, everything looks so GOOD. I love the looks of that upside down apple pie, definitely going to have to try that one.

I always “sample” out of the grocery store bins too. Whatever, I need to know if I’m going to like something before I buy it! Yes, even if I’ve already tried it a hundred times in my life before…

Christie – No, I haven’t tried to figure out the nutritional value as I don’t really count calories. When I bake/cook, I just try to use the healthiest, most wholesome ingredients. Plus I am NOT at all good with counting fiber, carb and all of those other grams!

where to start? i love your breakfast w/ the kashi crunch… i seriously stopped buying this stuff b/c its just SO good & addicting 🙂
